Noyaux?

I've been searching through my old formularies and distilling manuals looking for Crème de Noyaux. So far there's very little. Has anyone here made it or have old recipes for making it in the Books of Lore?

What he said. Everything. This is why I like beersmith. I take detailed notes for every recipe from mash to glass. Mineral additions, mash temp, SG, FG, fermentation temp, when it hits FG, mash pH, finished pH, yeast starter size, wash flavor notes. I picked up a copy of Beersmith. Nice that it wor...

Equipment: Notebooks

I've gotten past the "I'm not sure if this is right for me" stage and am interested in being being systematic so that I can get repeatable results and learn from each experiment. That means record keeping. And that means keeping a log or notebook. What does that mean? What should go into each entry?...

My concern is pectin. To say quinces are high in pectin is like saying pulled pork is high in delicious. Pectin -> methanol.
Am I being paranoid enough or too paranoid if I add pectinase to the wort?

Don't get too excited about States' Rights here. Medical Marijuana is still illegal. It's just that the Department of Justice and the DEA have been directed to not make prosecutions around the Bay and Humboldt County a high priority. Two years ago under a different President they were busy throwing ...

Bohunk, there are about a dozen small distilleries here in Portland. I'm pretty sure that all but one or two of them were 'shiners for years before they got that license.

We've had weevils and moths over the years. Evil things. The Extension Service can be very helpful. I called them and got a really useful pamphlet. First off, get the right container. Metal, glass or thick food plastic with a good lid is the way to go. Sometimes putting the grain in the freezer for ...

Prohibition was about a lot of things. Some of it was the political power of the Church. Some of it was racism. Some of it was women who couldn't speak up about domestic violence but could get support to put down the booze which fueled it. Some of it was Party politics. After a while it was the self...
