Re: And so it begins... from maguey to mescal

Smoked these for a few days between 220F and 240F. Opened up one of the big ones today and it's ready. I was told to shoot for the color of flan and I judging by before and after I think it's good. Tomorrow I will cut these things into cubes and macerate them and then attempt to do a mash. Anyone ha...

Re: And so it begins... from maguey to mescal

OK I had five or six smaller packets and two definitely felt soft this morning. Keep in mind I have no idea what I'm looking for at this point so I figure if they are pliable, they have been heated long enough. Honestly I'm not even sure I should taste it, we had to wear gloves to harvest it after r...

He hasn't steered me wrong... yet. Tomorrow I find out, and I only used a bit of the maguey so far so it isn't a huge loss if it's a failure.

Re: And so it begins... from maguey to mescal

Ok folks, time for some details. My friend owns a farm nearby and happens to have three or four maguey growing. He pulled the small one and gave me the piña. If I can make this work, I will be able to get the other, larger ones to make more mescal. I'm working off of this thread by Junkyard Dawg for...

Downtime

Ooops. Folks, 1. We had a rogue IP hitting the site a few million times which slowed everything down. I have blocked that IP. 2. I updated FreeBSD and the packages and found out that mysql 5.7 is no longer available and FreeBSD insists I upgrade to 8.1. This is a major, major hassle which I can't un...

Re: HD unsafe now?

That's the kind of stuff that makes me glad I don't deal that sort of thing much anymore. I'm sure there is a magic line somewhere that controls where it expects mod_ssl to be, finding it is the itch. I guess a simple ln -s /usr/local/libexec/apache24/mod_ssl.so /usr/local/etc/apache24/libexec/ won...

Re: HD unsafe now?

Just for ther sake of full disclosure here, the SSL certificates I use are actually free! Done by letsencrypt and they have been a real game changer in the industry for smaller sites like ours. The problem is that the software which automatically updates the certs broke recently. This was done by so...

Re: Homedistiller was down

OK folks, there is an upstream error in the automatic SSL cert renewal. I have found a workaround and implemented it, so secure web pages are once again working. I have to contact folks way above my head to get a permanent fix implemented. Sorry again for the hassles. This stuff is way above me and ...

I figured out what's doing it. I haven't figured out why. For now I've done a workaround and will look into this further ASAP.

Well, it happened again. Time seems to be the same two days in a row. I don't have the time to investigate right now but I will try to look into this later today.

Homedistiller was down

Wow,

Haven't seen this for years, but the web server software crashed.

For those of you who are unix literate, my fully up to date apache core dumped!

Haven't seen that for many years.

Should be back to normal now.

Re: My agave spirit

Someone has offered me four mature Maguey plants, each with a large piña. I'm wondering if anyone has gone this route? Do I need to smoke these things or can I just cut them up and mash them or ferment them? Looking for any clue here as I've only worked with agave extract but this offer is very tem...

I've never used a hydrometer to make cuts. Taste, smell, intuition. You'll do fine.

oh , when you guys talk about oyster shells, do you mean the kind I throw my chickens, or is it something different? Most of them are, but chook grit is not idiot proof and it can wreck a wash if you use stupid amounts or leave it in the fermenter for too long after the ferment is finished. If usin...

Always liked that song. A lot of my friends weren't into that album but I liked it.

Also like this remake of a song from their first LP
