Yes,the citric acid is just for PH adjustment.Lemon juice works,but will leave a little flavor.The citric wont.

I havent been around for quite a while,but Im here now! One thing that can cause your problem is the PH of your water,BEFORE you make any adjustments.My measurements were all based on my water,and my waters PH is 7.0.Either your water has a lower PH,and adding the citric acid makes the PH go so low,...

If you can,I would do a single run with little or no packing to get the best flavor.Dont push it too much or you will run your flavors together.

Add some calsium carbonate{slowly} and stir it every day,for 2-3 days.That should get it going again.Next time cut the amount of acid your using in half.Its probably your water.Once you figure out how much acid to use for YOUR water,you shouldnt have anymore problems.The carbonate settles,so stiring...

The fermax will do fine,but the 1118 probably wont.Go buy a jar,or brick of bakers yeast,and use a 1/2 cup of it.It will do better on this recipe.Save the 1118 for something with more fermentables in it. :D

I think you gave your yeast a fatal dose of sugar in the starter.I use a 1/2 cup of sugar in a gallon starter.Your yeast is not dead,but it might as well be,because it suffered osmotic stress,and its permantly damaged.Dont worry,just pinch more yeast,and if you make a starter,dont use very much suga...

I havent inverted it on these brown sugar and molassus washes.I ferment mine at 1070sg with 2 cups of red star{in 24 gallons}and they ferment like hell with dogsheads on the 2nd day.Since I started doing lower gravity ferments,I stopped inverting.

It restarts good using molassus,but molassus is loaded with neutrents,and they use molassus to make bakers yeast.
It dont restart good with plain sugar because of the missing neutrents I guess.

What Punkin said,
If you have a barrel of grapes,you dont need any sugar at all.Just use 4-5 packs of wine yeast.You should get some 8% wine that will make a real nice brandy if you clear it.
