It occurs to me that the hop flavour comes across just fine in beer that is mostly water. High test alcohol shouldnt be needed to carry over everything you want. Another thing I would suggest is , dont use bottles...how the fuck do you get a any sort of small dipper " like a bent up tea spoon" into a bottle to take a sample.......try smelling something from a bottle .....then a jar.........Bottles for cuts suck imo. Wide mouth ones might be ok ......
