It's still a little sweet. All natural, it was 1.030...I bumped it up to 1.050 with sugar and now its finished at 1.022ish. Great project. There are some pretty robust iPhone apps for the homebrewer which you could probably use for ideas. I use BeerSmith software on my PC and it is excellent.

I've got 5 gallons of cherry plum juice fermenting as we speak with EC1118. I started out with 2 6-gallon buckets of picked ripe fruit, let it ripen for a few weeks in the bucket then hit it with a paint stirrer on a drill...all juice. I ran about 4-5 generations and it was great. I do have all the separate ingredients now and plan to start a new batch in a month or so. Right now I'm working on some plum brandy in the ferementer right now.

I weighed the bucket and it's 40lbs, at 9.5% sugar by weight that is 3.8lbs of sugar. Assuming 3.8lbs of sugar will make a 6 gallon wash with an SG of 1.029 or 4.5% alcohol. I'd like to get it up above 1.050...so I'm not that far off. 3 lbs of sugar will bump the SG up by 23pts on a 6 gallon wash, w...

You could take a wire wheel like this one:

Distilling Beer, without hops.Will the beer style translate?

Everything that I have read about distilling beer speaks to the problems caused by the oils from the hop additions. Has anyone tried to pot still a beer like a hefeweizen, then dry hop it...maybe a little orange zest? I'm curious as to how any of the flavor profiles translate after distilling.
