rather then introducing another variable, wasting time and money on barrels (particularly in the early learning cycles). Imo barrels are far from a waste of time or money, nothing else works as well for aging booze. I aged in glass using oak sticks for quite a few years, nothing I ever did or tried...

Well Gosh a Wash….just squeezed out 10 gallons of 8% beer, ready to run as time allows. This Blu Corn, Yellow Corn, Long Brown Rice, definitely takes an extra 4 days to ferment using DADY. You want to use a particular enzyme for rice, aspergillus niger, to convert the startch. It's basically a fungus that can be bought concentrated or as a combo with yeast known as a Chinese yeast ball. Use the Aspergillus for conversion like malt. is this wash still alright to distill or should it just be dumbed out and restarted again? As has been already stated, it's good to be run.. I seem to remember reading somewhere that if a mash is allowed to ferment longer than 5 days, some unwanted flavors develop in the spirits that result. Has anyone ever heard anything similar? If so, is it true?
