I have smoked a lot of different types of grain and corn is really a pain. The smoke just does not latch on to the kernal the way it does with barley. Millet is even worse. Barley, especially malted barley, really soaks up the smoke flavor. If you get the corn cold first, it helps.

Boom, I wish you had had a better experience. For whiskey I would certainly buy new wood directly from barrel mill or black swan in the future. We still soak all our new barrels for 2-3 days even when brand spanking new. We have mostly sold our barrels to the brewing industry with great results. For...

I have a Tuthilltown Distillery branded 1Liter, and 3 Corsair branded barrels in 1 Liter and 2 Liter sizes. They are all well made. FYI, these guys make very small barrels, including 1 liter barrels. Yes, they use gas heat. They do not turn the grain during kilning.

Yes, just like smoking barley you have to be careful not let it get too hot and denature the enzymes. It needs to be cold smoked. The smaller the batch, the harder controlling temperature has been for me. Most smokers and grills are designed to hit the best temps for meat(225-350) usually, which is ...
