Re: smoking corn
I have smoked a lot of different types of grain and corn is really a pain. The smoke just does not latch on to the kernal the way it does with barley. Millet is even worse. Barley, especially malted barley, really soaks up the smoke flavor. If you get the corn cold first, it helps.

Re: My Corsair 5 gal barrels
acfixer69, Sorry for your loss. We certainly never intended it. We also struggle with barrel leaks and loss. We now swell with hot water for 2-3 days, as the hot water seems to do a better job. We want the barrel to hold water for a full day before we empty and swell now. Even the big boys have thei...

Re: My Corsair 5 gal barrels
Boom, I wish you had had a better experience. For whiskey I would certainly buy new wood directly from barrel mill or black swan in the future. We still soak all our new barrels for 2-3 days even when brand spanking new. We have mostly sold our barrels to the brewing industry with great results. For...

Re: Alt Whiskey's
Shinertexas, At Corsair we have done a lot of yeast and alternative to yeast experiments. We have done lagering experiments at cold temperatures, used every yeast we could find from sake to cider, and of course used yeast competitors like brettanomyces, lactobacillus, and pediococcus. Brettanomyces ...

Re: Recommended 5 gallon barrel for aging?
I have a Tuthilltown Distillery branded 1Liter, and 3 Corsair branded barrels in 1 Liter and 2 Liter sizes. They are all well made. They can put any logo on the barrel, so they are great for distillery gift shops, where you will often find them. We have used them for barrel aged cocktails in our tas...

Re: Recommended 5 gallon barrel for aging?
FYI, these guys make very small barrels, including 1 liter barrels. We have a lot of people ask us if we sell anything smaller than a 5 gallon, and we do not. http://www.1000oaksbarrel.com/index.php/oak-barrels-home-brews-cocktails/black-steel/138-1652013-02-27-21-59-22-806-8072013-02-28-00-37-43-81...

Thanks for the good words! I just was delivered the book Alt Whiskey's by Darek Bell, this guy to distilling is what Sam Caligione is to beer , there are quite a few recipies in here with enough background to help on your way , i would really suggest this book to anyone who is an intermidiate distil...

Re: The Maillard Reaction
At our distillery, Corsair, we use a lot of dark malts and believe heavily in the maillard reaction improving the finish of our whiskeys. We have experimented with about 60 different malts. One of my personal favorites is chocolate rye malt, if you add just 1% to the mash bill it comes over distilla...

Re: Destructive Distilling for liquid smoke
Most store bought liquid smokes have sugar added, which most distillers do NOT want in their whiskey. Store bought liquid smoke when added to whiskey, makes it taste gross, nothing like a smoked scotch in my humble opinion. Forgive me, but isnt liquid smoke already availaible from many different sou...

Boom, sorry for your troubles. This is Darek, the owner at Corsair. I have not been on homedistiller in a little while and just now saw this. Re: Recommended 5 gallon barrel for aging?
Varocketry, this Darek Bell, the owner of the Corsair Distillery. The barrels we sell are our own. Sorry you think our site looks shady, we are a small company, and use 'big commerce' the same ecommerce site many other craft distillers use. All our barrels have to be swelled before use. We just run ...

Re: Trip to micromaltster, Valley Malt, in Hadley, MA
What is amazing is that the whole system fits into a two car garage. It is literally in their garage. They have semi automated parts of it, mainly the steeping and kilning, though they still manually turn the grain. For example, it can send a text message to them on their iphones when something is f...

Trip to micromaltster, Valley Malt, in Hadley, MA
I had the pleasure of going to see Andrea and Christian Stanley this weekend at Valley Malt. They are a husband and wife team that run a craft malting facility called Valley Malt. They began with a 1 ton per week system and are now up to 4 ton system. They are cool people and use all local and organ...

Apology accepted. The reason everyone is here is to have fun right? We aren't saving lives, we are making alcohol. It should be enjoyable, let's try and keep things that way and a little more light hearted. And drop the unnecessary hostility. Cheers Darek I appreciate the response, you're being consi...

Re: malting oats
Yes, just like smoking barley you have to be careful not let it get too hot and denature the enzymes. It needs to be cold smoked. The smaller the batch, the harder controlling temperature has been for me. Most smokers and grills are designed to hit the best temps for meat(225-350) usually, which is ...

True, but when you malt it yourself you can smoke it during kilning. Oats take up smoke very well, as good as barley, in my humble opinion. Still say the easiest way to use Oat Malt is to order it here. http://www.midwestsupplies.com/oat-malt-thomas-fawcett-and-sons.html" onclick="window.o...

Re: The elusive millet whiskey
Did you have any problems with foam due to the higher protein? Millet, amaranth, and quinoa for me have been the worst in terms of blowing over in the fermenter and during distillation. I started my next millet based mash tonight. I boiled 20 lbs of millet in 10 gallons of water until almost all the...
