So... I haven't been on here in a very long time saddly :( But I had a question for sawbone... I did kinda what you did with the fruit and spices boil to get a "spiced rum essence" and it looked really good, smelled great and had that spicy fruity flavor I wanted in my rum, but the bummer ...

Well the wash ya made that tastes sweet might not be done fermenting. When you toss in the yeast if you get a bunch of oxygen in the wash, the yeast you throw in will multiply untill there is no more oxygen left and it will start to make alcohol. I haven't been on here in a looking time. But when I do my big washes (~20gallons is big for me) I will sometimes toss the yeast cake or take the yeast cake slurry out of the fermentor and boil it. Then when I'm done running I will pour the Dunder back into the fermentor and add my sugar and molasse...

That is really weird. I've never had the oil flavor come through on any of my runs. Maybe it has something to do with the still type? I have a pretty tall reflux still, not a pot still.... So maybe the oil won't climb the collum as it would in a pot still? Also my rum is pretty dark in flavor so tha...

Yea, that should work. You can also gage how done it is by how much sugar ya put in and how much it shoulda fermented from that sugar to find out when its REALLY done, not just stalled. But taste is a good indicator, the three day rule with the hydrometer is another good one if the wash doesn't tast...

Wow, that's insane amount of preassure. I don't currently have a corn keg, but probably will be in the market for one soon. But not sure if I wanna do co2 or carbonate with corn sugar. But deffinatly ganna not carbonate in a gallon jug!

Sounds good. Probably what I will do. I was thinking of using gallon jugs since I don't have bottles or a capper. Other possibility would be screw top caps. I know people discourage them, but they seem to be a good option for me right now without a bottle capper...but if not that, then the screw cap...

I was ganna use a stivia sweetener, or some other un-fermentable sugar. That, or force carbonate it. After the yeast is dead from freezing the cider. This would kill the yeast and I could cut it with just plain Apple juice. I've also herd Campden tablets will kill the yeast is ya add enough, but not...

I'm assuming you can use whatever size tube ya want for this? Like say if ya got 15' of 1" tygon tubing and dumped a half gallon in there then came back when it was all done filtering. That way you could go do something for an hr or so while it filters?

Yea, I would just toss in more sugar. The yeast will eat it up and make more booze for ya. Even white sugar with some citric acid would work. That way you don't get an overpowering flavor when you do run it.... but its up to you. that's what I would do.

Sometimes adding water to likker can make it cloudy. I would give it a few days. But if it doesn't settle out on the bottom, or ya don't get floaties on top I dunno what ya would do.... Maybe toss in the freezer? Sometimes fussel oils make the solution cloudy...
