Re: Rum Talk......

So... I haven't been on here in a very long time saddly :( But I had a question for sawbone... I did kinda what you did with the fruit and spices boil to get a "spiced rum essence" and it looked really good, smelled great and had that spicy fruity flavor I wanted in my rum, but the bummer ...

Re: My new approach to making a neutral

I've had some great luck with white sugar, some lemon juice and champaign yeast. The lemon juice converts the white sugar back into fermentable sugars and since it's a sugar base and not a grain base it has a sweet feel in the mouth, but not really any sweet flavor to it. It's probably my favorite n...

Re: Pugi's Rum or "Pugirum"

Well the wash ya made that tastes sweet might not be done fermenting. When you toss in the yeast if you get a bunch of oxygen in the wash, the yeast you throw in will multiply untill there is no more oxygen left and it will start to make alcohol. So maybe if ya stirred oxygen back Into the wash for ...

Re: Pugi's Rum or "Pugirum"

I haven't been on here in a looking time. But when I do my big washes (~20gallons is big for me) I will sometimes toss the yeast cake or take the yeast cake slurry out of the fermentor and boil it. Then when I'm done running I will pour the Dunder back into the fermentor and add my sugar and molasse...

Re: honey

Just found some honey for $24 a gallon. It's kinda a lot since I got two 10 gallon pales of it. But $240 for some sweet mead and honey shine should be worth it. A few friends and family are ganna take some off my hands too. But I'm really excited to get it started! Just gadda go get the yeast and st...

Re: Pugi's Rum or "Pugirum"

Yea, I've done 4 stripping runs and 1 spirit run besides the water/vinegar run and the sacrificial run. It's a 2" valved reflux with a keg boiler. So 60 gallons was only about 6 runs total... The outside looks good, the inside has an orange/reddish dust on the.inside of condensor. Just the top ...

I thought it would.have by now...but maybe it hasn't? I've run waaaaay more volume through it than the first one I built, and I didn't have this issue before. But if that's the issue... Can I just run the same batch through over and over till there is a good layer developing? Like take the disstilat...

Re: Pugi's Rum or "Pugirum"

I just got done with a spirit run a little while ago, and it had a really bad after taste, that just lingers in the mouth forever...literally still can taste it an hr later. at first, thought I could wait it out and mask it with vanilla and sugar, but its not working. The taste it like an old batter...

Re: Pugi's Rum or "Pugirum"

That is really weird. I've never had the oil flavor come through on any of my runs. Maybe it has something to do with the still type? I have a pretty tall reflux still, not a pot still.... So maybe the oil won't climb the collum as it would in a pot still? Also my rum is pretty dark in flavor so tha...

Re: Pugi's Rum or "Pugirum"

I just got done doing a spirit run of this a different way and was pretty disappointed with the results. The first time I did it, I just kept the hearts and a little above and below for good measure and saved the rum oils. Didn't mix them in with the tails or heads. Did about 6 five gallon batches a...

So I got some really good Apple cider from a place I grew up in. It's been clearing out for about a week after it stopped fermenting. Re: Hook Rum

Yea, that should work. You can also gage how done it is by how much sugar ya put in and how much it shoulda fermented from that sugar to find out when its REALLY done, not just stalled. But taste is a good indicator, the three day rule with the hydrometer is another good one if the wash doesn't tast...

Re: Hook Rum

Well, if ya think about how molasses gives false readings... It should have the same consistent falseness before and after. The only reason its false it because of the suspended solids and unfermentables in the wash. So let's say that's "x" in an equation. So say you take your Initial SG a...

Yea, fridging will clear up a lot, freezer works well too...and usually a little faster. When I toss my Carmel in with my rum I wait till its all dissolved. Then toss in the freezer for a day or two and it settles out the whole jar really well. I usually filter it through a coffee filter a couple ti...

Re: Quick fermentation on hard cider

Sounds good. Probably what I will do. I was thinking of using gallon jugs since I don't have bottles or a capper. Other possibility would be screw top caps. I know people discourage them, but they seem to be a good option for me right now without a bottle capper...but if not that, then the screw cap...

Re: Quick fermentation on hard cider

I was ganna use a stivia sweetener, or some other un-fermentable sugar. That, or force carbonate it. After the yeast is dead from freezing the cider. This would kill the yeast and I could cut it with just plain Apple juice. I've also herd Campden tablets will kill the yeast is ya add enough, but not...

2" tubing I could probably find, but 4" would be a little hard to find I believe. Unless I just went to get some copper pipe sections and use that. But the 1.5" stick I have left over from my very first still would prolly work awesome in that jig 7 built. Might have to get my McGuyver...

Re: Lincoln County Process and Sugar Maple Charcoal

I'm assuming you can use whatever size tube ya want for this? Like say if ya got 15' of 1" tygon tubing and dumped a half gallon in there then came back when it was all done filtering. That way you could go do something for an hr or so while it filters?

Re: Pugi's Rum or "Pugirum"

Yea, I would just toss in more sugar. The yeast will eat it up and make more booze for ya. Even white sugar with some citric acid would work. That way you don't get an overpowering flavor when you do run it.... but its up to you. that's what I would do.

I had thought about old wine barrells too. The wife watches some kids who's parents are both head wine makers at two big different wineries... So I think I could sweet talk them into letting a few barells go for pretty cheap... But I wouldn't want the wine contamination. Just scrape and boil the sta...

I'm sure it could he shipped. We have a few companies that sell a huge selection here...some flavors are a little out there like pistachio(the nut, not the pudding), but they make them, so I guess someone drinks them :/ I was just wondering if that would even mix well with the likker, or if it would...
