Re: Uncle Remus Rice Vodka
Is there anything wrong with bringing your cooking water up to a boil before adding the rice? I see most people bring everything to a boil together. I do not have a false bottom brewing pot. I figured it would be easier to prevent scorching if I brought the water to a boil first and slowly stir in ...

Red Star Pasteur Champagne VS Distillers yeast (DADY)
I have been using Red Star Pasteur Champagne yeast since I started home distilling. I use one packet (.176 oz or 5 grams) to a 5 gallon batch. I have moved up to a larger fermenter now and looking into buying yeast in a larger quantity. I am looking at Distillers yeast (DADY).....my questions are, d...

Re: List of woods suitable for aging
This may be a silly question, but what are some of the techniques you guys use to cut out the heart of the wood like oak? As if it was a branch that was 6-10" across. Assuming the heart of the wood is the dark center, and the lighter around it is the sap wood. Chop it into 6 inch sections and ...

Worm/Condenser question
My question is on the size of the tubing, I am using 1/2" O.D. copper tubing now and wondering if I upgrade to 3/4" O.D. if that will condense more product. My worm now is 1/2" O.D. copper tubing and right at 14' long coiled in containment. My current cooking pot is only 4-5 gallons. ...

Always did understand pecan to be the fruit of hickory, having been belted with a hickory stick don't remember thinking how soft it felt  . Re: Nuclear Whiskey / Nuclear Rum and Spirits Rapid Ageing
Correct, you can see the color shift from the heartwood to sapwood. Cut out the heartwood. Cut it into strips. I use 1x1x5 inches size which seems about right to drop in 1 quart. Then cook it in your oven at 400 for 2 hours (that brings out the carmel, vanilla. After that, char it all sides with a ...

Thank you for the reply. I posted on another thread asking since I have oak cut as firewood, what steps do I need to take to cut out the desired area of the wood. I read it is the hearts, so that would be the center of the trunk/limb?

I used a brand called western pecan bbq smoking chips. Since it says they are kiln dried I figured they did not need to be placef in an oven. But my product has an off taste. Any thoughts?

Re: Nuclear Whiskey / Nuclear Rum and Spirits Rapid Ageing
I always toast them unless they're JD chips (already toasted). Don't taste right to me without it. 350degF for an hour is my starting point. Used to char in the broiler, but use a torch now- faster and less grief from the wife. Like FS said, up to the distiller. When you use the oven for an hour at...

Re: Nuclear Whiskey / Nuclear Rum and Spirits Rapid Ageing
The chips you can buy for smoking (cooking) in a bar-b-q pit. Do you toast them in the oven before putting them on a spirit or straight out of the bag them come in? I ask since I bought a bag of Pecan wood chips (which are labeled in a way that made me think they had been heated) filled a quart jar ...

Question about sugar in Whiskey....
I was sure I had read somewhere on this forum about a recipe using brown sugar in a mixter that you can add to likker that had been aged on oak to add a sweet favor. It also talked about how some whiskey makers such as Jack Daniels uses sugar in the final product. I am asking if anyone knows where I...
