Re: Recently licensed micro-distillery, etiquette question

Read this the other day and the OP reminded me of it. You have to get to the last para to see my point http://spiritsjournal.klwines.com/klwinescom-spirits-blog/2016/5/19/saturation-part-ii.html" onclick="window.open(this.href);return false;" rel="nofollow That's a really good a...

Re: Recently licensed micro-distillery, etiquette question

I, personally, have never had green particles or flecks in my tails... But, then again, I don't do all grain mashes... All I have ever gotten is fusel oils floating on top of the tails and I've run down to under 10% more than a few times... Heck, I've only ever had clouding a time or three... The o...

Re: Recently licensed micro-distillery, etiquette question

They may have run deep into the tails to improve profit margin, or due to inexperience, but that in no way correlates to the colored flecks at the bottom of the bottle... That would be a foreign impurity - most likely copper salts - which can be unhealthy to consume... If bad reviews get back to th...

Re: Recently licensed micro-distillery, etiquette question

I know a couple who just got their new micro-distillery licensed and operating. They're not really close friends, but I've worked with and for them in my day job as a civil engineer, and I know them well enough to know that they're pretty awesome people. I just saw a bottle of their newly-released ...

Re: flour

Thanks, Jimbo; I thought I remembered seeing something about that. I was even stirring it when it scorched. I had just barely started the burner really low and felt it start to stick. Kept stirring, and 5 minutes later started to smell smoke. I had planned to stir until it reached 160°, then assembl...

flour

I learned an important lesson last night: If you add just a little bit of rye flour to a grain bill of corn and 6-row, you get gravy. Gravy with corn and barley suspended in it, but still gravy. Sweet and nicely converted gravy, but still gravy. A gravy that passes through whatever filter you attemp...

Re: What'd ya'll make today?

Separated 40 gallons of bourbon wash through my cider press... 40lb cracked corn, 25lb corn meal, 10lb red wheat, 5lb crystal 120 malt, 1lb chocolate malt, 15lb 6-row, 45 gallons water, 8tbsp citric acid... fermented to 0.99 in 2 days! This smells awesome; can't wait to run it this weekend! I left a...

Re: Uncle Remus Rice Vodka

So you are not going to even re run the low wines? I'm definitely going to run it twice more. I only tossed foreshots on this run; no heads cut and ran it down to about 25% ABV. I'm just sharing tasting notes, not trying to do anything too exotic. I was planning a simple all-grain rice vodka, disti...

Re: Uncle Remus Rice Vodka

I started up a batch of rice wash for vodka today... 50lb of rice in 20 gallons of boiling water makes a sticky mess... lots of work to break it up... this is more work than corn! Let it steep for a few hours then started adding enzymes a bit at a time to help loosen things up. Added 1.5oz amylase ...

Re: English Chocolate Malt

I used some crystal 120 and chocolate malt in a bourbon recently... 14% and 3% of the total grain bill. That was way too much. Use the specialty malts sparingly because a LOT of flavor carries over, and there is definitely a point where it becomes too much (my experience based on one batch).

Re: funky tasting whiskey

I think I figured this one out... I had the same problem with the sugar-head tag-along (thanks for the idea Jimbo!) from the batch of grains with the crystal and chocolate malts. The sugar-head tasted great coming off of the still, then sickly-sweet and funky a few days later. The problem is that a ...

Re: funky tasting whiskey

Thanks for the quick reply... I removed it from the barrel, and it still tastes funny 12 days later. Definitely not impressed; there are some good tastes and velvety smoothness there (even at 120°), but enough off-tastes to make it unpalatable. I'm going to re-distill it tomorrow. I disassembled the...

funky tasting whiskey

I just finished a four-generation sour-mash bourbon project, and I'm getting some odd tastes in the finished product. Straight off of the still last night, it tasted absolutely delicious, light and crisp with lots of grain flavor, and I'm pretty sure I cut heads and tails appropriately... no hint of...

First run with the new still. Used the cap and condenser from the clawhammer kit but added another liebig condenser to handle the larger burner's heat output. Went a little wild with the flour paste just to be sure.

NKT from Northern CA

Howdy, Newb distiller from Northern California here... been interested in distilling ever since I saw "triple-distilled" on the bottle as I was sneaking liquor out of my parents' cabinet at 10 years old... finally getting around to learning more about it at 35 years old... I started off wi...
