Hey all,
So, I now have 5gal of low wines ready for the spirit run. Has anyone ever used part of the backset to dilute the low wines down to 40% for the final spirit run?
I was just thinking it might impart more flavor? Would this be a bad idea?

Just got home a couple days early from fishing, and oh my my, the second ferment looks awesome. Good and cleared ready to run. I guess letting it sit for three weeks was no problem.

Hey Andy,
The only reason I wasn't going to start a new batch, is because I won't be back from fishing until the 9th of march, and I was worried about leaving it ferment for 3 weeks.
Do you think it would be ok fermenting that long? If so, maybe I'll go ahead and start it.

Thanks Lwt, I can finally see the clearing today. I'm racking it off to separate container and going to let it settle some more till the weekend. This is the first time I'm trying out this Rum recipe. It's been clearing for two days now and doesn't look any different.
1. how long does this wash take to clear?
2. What should I look for to know it's cleared? Will become clear like most whiskey washes?

Running off 10 gal today. My FG was .99 from 1.07. I'm super happy with this recipe, I sure hope to have some awesome hooch by the end of the day.

You do want it cracked. I buy mine already cracked, so I've never cracked it myself. But, i would think you could just do a very course grind to get a good crack.

Finished mashing a double batch last night. This morning when I went to pitch the yeast my OG was 1.07. This evening is bubbling away wonderfully!! I'm pretty exited about this batch so far. hopefully it will be ready to run by this weekend.

Electric is definitely the way to go (IMO). I'll snap some pics of my controller and setup if you want. It's super easy to do. My initial heat up time only takes about an hour(ish) for 8-10 gallons. Plus, when I'm running in pot still mode, it's so much easier and more accurate to control the temp.

I agree completely, I have a 4500w heater element for my boiler, so stillin inside is perfect. it's nice to have the big screen and the still in the same room all while staying warm and cozy!
