You can add oats anytime... But they are not malts, so there's no enzymes to kill in them. Might as well get the most out of them and cook them with the corn. Unless you're keeping heat on the corn and actually cooking it... Water needs to be a solid 212 furious boil. Corn will bring that down to about 185 +/- 5. Add BOILING water, mix, throw in enzymes. Let it sit for a while.

That water was what you were looking for. You should be giving it a good stir a couple times during the long mash, but taste it in an hour or so and I bet it will taste like sugar water. It's water and starch, the solids just settle down during the rest.

Traditionally the red provides a little bit more spice than white. I developed the wheat mix in honey bear, and threw some red in the absence of any rye. I brought the mix over to this recipe, but this recipe has rye in it. So it might be you don't tell a difference because any spice would be attrib...

Boiling is not 165. This is not being pedantic... you need every bit of 212 if you are going to efficiently cook the corn with a passive method. Not even a soft boil... you need rolling boil. That's the biggest thing to fix, as you did not get most of the corn potential alcohol.
