Great advise guy Thanks, I have been making UJSSM in pot still mode and want to run a spirit run, If I run it in reflux at higher ABV will it still be whiskey?

I can feed it full cooling water and not get anything out of the condenser untill I start to cut back on the cooling water, That will control the output.

If I run water through the reflux area in the top it will reflux but I have been running as a pot still and can easily put one more section in between the one that is there and the reflux section. I am currently doing stripping runs and going to run a spirit run after I get enough product. Any point...

As stated in my original question, I have a 2" diameter column that is 2 feet tall and an 8 gallon milk can style boiler and it has a reflux section at the top. the 2 foot section is removable, What I am asking is if I buy an additional 2" diameter 2 foot section will there be any benefit ...

Captb, I should add, there was another poster earlier on in this thread who felt the oats in his recipe were giving flavors he didn't like in the finished product, so he's started adjusting the grain mix, lowering the oats content, upping the corn (possibly the barley too...don't recall). I have Backset from a sweetfeed run I just did, I want to use it for the first all corn ferment is there a reason I wouldnt want to do that?

Captb, Yeast reproduce. Grains and water don't. You could increase the quantity of yeast cells if you want. But you don't need to. But you do need to be patient for the budding to occur. Corn to Water ratio?

I plan to start making uncle jesse's simple sour mash and need to know what the ratio is for corn to water, the recipe has 7 pounds to 5 gallons of water I will be making 8 gallons at a time, is there a calculator for that as well as Sugar ratio or just check with hydrometer? Thanks

I have run 2 generations of Sweetfeed Whiskey with good results. I am now on the 3rd fermentation this one has backset in it I mixed it up and added 2 tablespoons of bakers yeast and the airlock was bubbling away in under 5 minutes. It checked 1.06 in the beginning then stopped bubbling at about 60 ...

Does anyone remember how long a later generation takes to complete fermentation? I am on my 3rd using (7gallons) about a 1/4 backset and it finished in about 60 hours .095 I am going to let it sit another week to settle and see what I get it down to.

Just siphoned gen 2 wash into boiler and checked with hydrometer is it possible to have 12-14% ABV?
What have some others experienced?
Gen 3 is Raging away now with backset in it now!

Great advise thanks, One more question After I blend and cut to find the best product can I dump the heads and tails right into the boiler with the next ferment? I dont think I will be able to get enough to make an all heads tails run anytime soon.

I have an 8 gallon still, My ferment ends up being approx 5 gallons after racking and straining to clear, Can I add 2 gallons of backset to the boiler with my 5 gallons? My backset has been distilled down to about 25 proof is there still useable alcohol and flavor in it?

I run a pot still and I always aim my spirit runs so that I don't have to add water to cut down the abv. Mitchy, do you do this by diluting the low wines? I do a strip, and then a spirit run diluted down to 40%, and I usually end up, after cuts, with stuff that needs to be further diluted. Not much...
