With UJSSM you will find that too much time with tight cuts you loose complexity. I have a batch that is over 3 years old now and its very smooth but too smooth at 2 years old was a much better whiskey more complex.

Re: Gin filtration

If you gin is cloudy at 40% take some neutral and up the % I normally do 43% for gin.. but 46% for most other bottling so will go upto there.

If a lot of the oil come over things can be cloudy. Just up the % a little till it goes away. Its a good thing that means you go the flavor your after.

Another tip use the cleanest neutral you can make. I do 35g ferments then strip 3 and then run them all for a final run after diluting.. Make very clean cuts!

Re: Cuts when using NGS

You will need to make cuts by Smell taste etc... best of luck. Most should be hearts its was made well. sample what you buy to get a feel for it before.. you run it but any I have tried cuts were not great and needs a pass through the reflux still for GNS to be good in my books. Also don't forget to...

OEG is a great one. I like it best with the tangerine peal cut back a bit if you have really nice fresh larger tangerines. I did normal coriander and juniper and cut back to about to about 2/3 the Tangerine skins in my 26l batch I did. got 26 750's @ 43% long gone... except about 1/2 a bottle I foun...

Re: Question about Taking Original Gravity

I do about 1.042 for starters.. I usually use DME though to do a 1 to 1.5l starter and then step it up. Make sure you pick a yeast for your temp range.. and ideally one that goes as low as possible so less residual sugars. This will decrease the chance of scorching. if you got 1g of liquid from your...

Re: Aging whisky in cornet kegs

I use a corny keg for aging just be sure you change all the orings to ptfe... or you risk issues and your orings leaching. You don't need to pressurize it.. per say.. but fill cold seal lid and put up in hot garage or something.. With temp changes pressure will increase/decrease. One thing to be ver...

Aging on Oaking takes months not weeks. Typically I use sticks and like about 9 months to a year with 6 sticks per gallon the T-Pee way.

Look into enzymes also. Boomers comes to mind.. Sheldon did a video on youtube also using corn and enzymes. You could use that method then add some you corn malt and beta enzymes to get around 146 to 148f for the mash. For corn I find longer mash times help og. Also keep eye on oh and adjust in each...
