I make this frequently. One thing I've been doing is saving the squeezed ginger and cloves. After I squeeze everything, I put the ginger and cloves into a jar of 150 proof and let it sit. I add both of the high temp enzymes as insurance but other than that, I mash exactly the way SCD described.

I did 2 spirit runs on 100 lbs of panela. I ended up keeping approximately 6.5 gallons @ 120 proof average, after cuts. Ive got one gallon on Pugi's suggestion of pineapple, cloves and raisins. 32lbs cracked corn, 8lbs oats, 8 lbs malt barley, 8 lbs malt rye. Steep cooked the ground cracked corn and oats, added alpha. I used Sebstar enzymes. Added the gluco and malt barley at 153f. 24 gallons of water total. It all went into a 32 gallon Brute trash can. Racked it off yesterday.

I use them frequently. After the first use, I let them air dry. After I collect enough of them, I put them in the toaster oven and retoast. After the second use, I char them with a torch. Three uses per stick is as far as I have used them. I use 4" per gallon.

I've been reading the forums and the homesite for over a year. I have a 5 gallon Alembic that I've ran many batches from the tried and true. I'm into all grain now and enjoying that process.
