Re: Honey Bear Bourbon

Last weekend I did the first spirit run of this recipe. 9 gallons of 70 proof went in and I collected 3 gallons total after cuts. I let it air out for a few days and I haven't decided yet how to finish it. How is the final cut ratio compared to others running this recipe? This recipe didn't disappoi...

Re: Ginger Liquour

I make this frequently. One thing I've been doing is saving the squeezed ginger and cloves. After I squeeze everything, I put the ginger and cloves into a jar of 150 proof and let it sit. When I'm ready to make this recipe again, I use this 150 proof mixture. I also use this as a base for a medicina...

This was the one variation to your original recipe that I did out of habit since I use both high temp enzymes. I didn't realize it until I read your post.

Re: Honey Bear Bourbon

I bought enough honey malt to do a half a bag of the other malts. I was going to find a different recipe to use the other 25 lbs of malts. After doing my first stripping run, I know what recipe I'm going to use the grains on. More Honey Bear Bourbon!!! I've done my fair share of AG's lately and this...

I add both of the high temp enzymes as insurance but other than that, I mash exactly the way SCD described.

Re: Honey Bear Bourbon

I ground the grains today. 25 lbs corn, 5 lbs each of the malts except for 3 lbs of the honey malt. I just sprinkled 3 packs of Prestige WD yeast on top. I used both enzymes, Alpha and gluco. This is my first time using any of these malts. I've used malt barley and rye up until now. This is easily t...

I just ordered the malts to do multiple batches. I've been intrigued by this recipe for a while. I've finally got other ferments out of the way to give this a shot.

Re: Panela goodness

I did 2 spirit runs on 100 lbs of panela. I ended up keeping approximately 6.5 gallons @ 120 proof average, after cuts. Ive got one gallon on Pugi's suggestion of pineapple, cloves and raisins. I also have a gallon on medium plus french oak and a gallon on Hungarian oak. The rest is still white unti...

Re: Rice n malt whiskey

I just did a stripping run on this recipe,12.5 #'s of each grain: Corn, rice, oats and 2 row malt barley. I started another ferment yesterday. I stole a sip during the stripping run and it tasted good. I still need to do more batches before I do a spirit run but it seems promising. I've been curios ...

That's possible. I have been using this for about 6 months and wash it between different types of ferments. I may have missed something along the way.

My first wild ferment

I made an AG yesterday of 12.5 lbs each of corn, oats, rice and malt barley. I used high temp enzymes and added malt barley and gluco enzymes around 150f. I put everything into a 32 gallon brute and waited overnight for the temperature to drop low enough to pitch US 05. I woke up this morning to a t...

I use them frequently. After the first use, I let them air dry. After I collect enough of them, I put them in the toaster oven and retoast. After the second use, I char them with a torch. Three uses per stick is as far as I have used them. I use 4" per gallon.

MC, My first experiment was a rice and sweet potato combination. I recently bought a small grain mill and ground 10lbs of extra long grain rice. I bought 5lbs of sweet potatoes. I washed and sliced them into small pieces. I then added the small pieces and some water into a blender and blended them r...

Hello from the low country, SC

I've been reading the forums and the homesite for over a year. I have a 5 gallon Alembic that I've ran many batches from the tried and true. I'm into all grain now and enjoying that process.
