I reckon Ima make 50 gal ferment next weekend after the HBB is finished stripping and squeezed. I still have some aged dunder from 2017 that was sterilized and sealed. Certain yeast will do better for aging after a rack, 71B is horrible but QA23 Is great for fine lees. They'll clean up behind themselves and wont impart naties if left for up to a year. Scottlabhandbook is my go for yeast selection, they also give very detailed descriptions on charachter and best us...

I love buckwheat honey, it's probably one I use the most for backsweetening when I only need a little touch of complexity and sweetness. As of now the ph is right at 2.9 and sg is 1.048 The ph in wine and mead are so much different than in an AG mash and I had to learn that from some really good mead makers. 3.2-3.6 is the range it prefers from my learnings. In all honesty I wouldn't waste the fruit mixing with grains. They are hard enough to find the fruit flavor alone without additives so if you add another dominant flavor I believe you will never get anything other than the grain flavor.

When I do molasses rums my sg never finishes at 1 or below, at least with a hydrometer floating because of the solids and unfermentables. 1.020ish isn't uncommon but i go by taste alone on these not by numbers.
