Re: Honey Bear Bourbon

One year in a charred barrel has done my HBB well. Samplers swear they taste honey and vanilla and want to know how much I put in there -----ha! Time to refill the barrel and start over again and I hope there's enough woody goodness to go another year. New folks---- do this recipe and treat yourself...

My 9-month-old oaked HBB tastes Balanced and Coordinated.

Re: Cornflakes whiskey

So I just racked to secondary and there is so much sludge at the bottom I lost about 2.5 gallons in a 6 gallon wash. I see some others had similar problems in the thread. I guess I will let it sit and see if the sludge settles down so I can get a little more form it. Get some paint strainer bags to...

Starting this rye today. In 3 hours I'll have the whole empty house to myself for cooking and destroying making an interesting mash. Any last words of wisdom before I start? Smart people? Wizards? Exorcists? 10 Hours later : This looks like it's going to be some bad-ass stout rye, Still Life! I sin...

Re: Breaking Protocol: Made My Own Rye Recipe

I haven't checked in for a while, but I thought my ears were ringing. I'm glad you like this rye, Chixter. Fizzix, I've had this rye in a 5-liter charred oak cask since July 1st of last year. Whereas when it was young, I could put my finger on each flavor, that is not true now. For you, I also did a...

Usually only clean once (vinegar/water, followed by sacrificial) before you put it in service, or if you
modify/add something new in the vapor path.

Here's how to clean your still if you need it.
The process is the same for Reflux stills.

Picked up some Simpson's peated malt to add to this next batch today. It has the most pleasant earthy, grassy smell. Will cook ½ pound with the corn, oats, and honey malt. Then mash in another ½ pound with the red, pale, & white. Peat has been on my mind lately. Have never used it before, so why...

Sure!
Yeast consumes sugar (and added nutrients) and expels alcohol.
That sugar can come from grain like corn, or from a sack from the grocer.
Or am I misinterpreting your question?
