Re: Ginger Beer Soda
I like making my own Gingerbug, that way no yeast is required. Slice and cut fine 28 gram of ginger, keep the skin on as ginger beasties like this. Add to a 1 ltr or so glass jar, add 28 gram of sugar too. Stir well. Keep at a nice warm temp, say 30 degrees. Boiler cupboard is perfect. Then, for the...

Re: Rice wine, anyone?
I got one on the stove now. Any glutinous rice will do, but obviously will make or break the flavor. Im boiling the rice, and using Sebstar HTL at 83 ish celcius then Sebstar GL at 62 ish celsius, both for at least 2 hrs at hose temps. Then dissolve with sugar, add 4 ltr good quality light white gra...

Re: 40% neutral gone off? Got floaties
Ya want a crisp vodka from a basic pot let is clear and strip to low wines, run low wines slowish to high wines and do rough cuts then run your high wines at a slow spirit run speed and do precision cuts. If you want a dead neutral from a basic pot still marbles work best, fill ya mouth full of em ...

I can buy online oak/ maple/ apple chips for a premium, but the ones used for BBQ (the ones used for brewing can get confiscated in customs. I pick up you're in the middle east? If you are where I think you are (Saudi?), use a site called Desertcart, they deliver in most places in the middle east a...

And I appreciate that, really do. Thanks folks, Pope - It was normal water from a 19l / 5G bottle, brand Nestle. Otis - I do use DAP in unmeasured amounts, so this could have contributed. It's definitely got a blue tint to it. Stillerboy & NZChris - The so called Neutral came from a stripped sugarwash followed by the usual spiri...

Well shit . You ain't gonna get Neutral from a pot still ... sorry ..thats just the reality . Point well noted, thanks. But what are the floaties? "Fusels" falling out of suspension when the proof drops. Or something in your water. Or dirty jars. I'll read up on those fusels. Funny thing ...

40% neutral gone off? Got floaties
Hi all, I'm troubled. I have build up a bit of stock of neutral from my T-500 copper dome potstill, all sugarwashes and was shocked to see a couple of my latest bottles (maybe 3 weeks old) of neutral containing sort of white greenish "snowflakes" floating in it, almost a moldy or algae kin...

OK, so I had a guys get together watching Bundesliga as it's the only football league that started, and decided to bring my collection of rums, consisting of 1. A jamaican rum flavored neutral, 2. Buccaneer Bobs silver, 3. Buccaneer Bobs gold and 4. Hook Rum. Obviously the flavored stuff is least......

Re: Cornflakes whiskey
Had some of this at 2 months old, aged on some oak. Heaps of corny flavor, not quite the whiskey I know from living in Scotland, but very smooth, corny, earthy and oaky and just pleasant overall. Im glad it developed some more nose, as that was missing a bit initially. Probably the oak contributed t...

So I really appreciate the responses. I made a TPW, ran it through a carbon filtre and did the following. Still spirits jamacian dark rum essence and aged on bourbon staves for 3 months... and was not that good. 3/5 Seabeast (Forgot who makes it) supposed to be a kraken...and was not that good. 2/5...

Re: What is the Best rum from a brown sugar wash and reflux still
Agree with Saltbush. I have a T500 too, but use the copper dome and condensor for flavourfull spirits like rum and whiskey which works fine. I find the Still spirits flavoring ok, however you cannot compare it to a proper rum wash see tried and true recipes and make sure to use molasses. you'll not ...

Thanks gents, it is ordinary CC in granular shape form a reputable brewing equipment distributor. I fill till 25 liter / 5g in a 30 liter / 6g bucket. Havent used fermcap before... will look into it. Re: Ph crashes in sugar washes
It's done it again, big foam like bubbles bubbling right out the waterlock hole, filling the lid and the floor of the cupboard. Can't help but feel its a reaction between the CC, yeast and perhaps the leftover rice that didnt get broken down fully by the sebstar products. Don't know what else it cou...

Re: Ph crashes in sugar washes
Nice one bluefish that helped. first put in 4gr citric acid and 4gr CC, then waited a bit and pitched yeast. Now next morning it still crashed to 3.2 though, so had to add even more CC to get it above 4. the citric acid and CC didnt seem to buffer at all. Not sure what happened there. So far so good...

Re: Ph crashes in sugar washes
Glad I found this post. Reading on PH initially and having bought a PH meter I stopped adding citric acid to my wash as I wanted to keep PH at about 5.0, only to find it at 3.3 next morning. Then adding calcium carbonate to reach 4.5 but had horrible foam overs in the hours and day after. It was a l...

Re: Buccaneer Bob's Silver, Gold, and Black Rum Recipe
So both fermenters read 0.998 on day 8 (5 days after adding the sugar) so suggests its ready to strip, however it still got that milky shine through it from the yeast and or yeast trub. There is also a layer of yeast at the bottom of course. Should i run it as the esters will be nice and high now, o...

Re: Cornflakes whiskey
Two things you could consider in order to both increase yield and flavor: 1. Since your overal ABV after the finishing run is pretty high, maybe not strip all the cornflakes ferment in to low wines, but keep a few liters to dilute your next low wines batch with, before you do the next finishing run...

Re: Buccaneer Bob's Silver, Gold, and Black Rum Recipe
Got 2x 6gallon fermenters on, added the sugar this morning and they are both bubbling away again. Got a really good feeling about this. Great idea to keep the dunder for flavoring and colouring. Did a hook rum before which i aged on oak and got a beautiful gold colour on it, but kept a bit too many ...

Couple of Eureka's
So recently I made a couple of changes in my equipment and they made a huge impact to the quantity and quality of my products. I purchased a T-500 with reflux column a year ago and did plenty of sugarwashes and breakfast grain washes for wodkas, most came out ok but never really very clean or good, ...

Lekker recept Odin! (nice recipe Odin!) I ran sugarwashes with maybe 150gr. of flakes or cheerios before, but love this Whiskey recipe. After plenty of sugarwashes that I usually flavour and a large rum run I wanted something else so decided to give this a bash. Never had a wash stall before (except...

Mendel, I used Sugar in the raw as I used Hook Rum as base recipe, which calls for raw sugar and I assumed sugar in the raw was just that. It's been a long time since I haven't gotten at least a 50% hearts cuts on any spirit. Your hearts cut will depend a lot on how well your ferment goes. The ferment to me is the most important part of the process where your good and bad flavors come into play. Temps, pH, proper nutrients added at pr...
