Re: Fruit / Berry Recipes
I did this as recommended and after airing out almost two days did my cuts as best as I could. Heads were easy (I think anyway) and tails are tougher for me to pick out. Cut about 2 and a half quarts on the front end and two quarts on the back. That’s what was left after i make my cuts. The final pr...

Re: Fruit / Berry Recipes
Thank you for the suggestion about adding the first run product into the second run as well as “cuts” advice. This is my first “keeper”run and I’ve really tried to make a nice product. Made the first run and collected probably about 2 1/2 gallons which comes in at 85 proof. Ran it down to about 35 p...

Re: Fruit / Berry Recipes
Okay, I’ve got a little over 20 gallons of absolutely beautiful peach\strawberry wine racked off the fermentation buckets into carboys (80 lbs peaches, 12 lbs strawberries, 25lbs sugar) great color and smell and very clean looking. Two questions, I’m very new. My still is a 16 gallon one. Should I d...

Re: Fruit / Berry Recipes
Okay, I’m going with fermenting in 8 gallon plastic fermenters with drilled bottoms sitting in similar undrilled fermenters and just planning to work a strain of the mash out from there (I can manage three of these setups). I Have just under 70 lbs of frozen peaches (halfed and pitted) from an orcha...

Re: Fruit / Berry Recipes
Does this stuff ferment out to a point that it would pull through a siphon? If not how do you get it from the fermenter to the cook pot, or to a secondary fermenter. It looks like I’m going to end up with some hard to work with peach sludge and I don’t want to just dump it yeast and all into my still.

Re: Fruit / Berry Recipes
Alright I read the entire string and see ya said earlier the 1118 would be adequate all on it’s on. I’ll waive the smack down, still if there is anything else...I still got 60 lbs of peaches in the freezer today....

Re: Fruit / Berry Recipes
Why do you use both the “wine yeast” and distillers yeast? And by distillers yeast do you mean some kind of high octane turbo yeast? Put 60lbs of peaches in the freezer earlier today and I’m excited to try this recipe. Second run, first was sugar wash. I will probably have to to do two ferments to g...

Re: Apple Brandy Recipe
I think this looks very cool and I will definitely try something like this in the near future. I’m brand new but this doesn’t look hard and does intrigue me. Has anyone else made this?

Said to intro myself with a little info. Got bored several years ago with doing all grain\mash brews and gave it up. Thought this looked interesting and have taken it up. Bought a 16 gallon 4 inch column flute still and have sugar wash bubbling in 4 5 gallon carboys at the moment. Hoping that makes ...
