You have the regulator so use it. Cloths pin on the needle valve will make it easier to fine tune water flow.

The beauty of this hobby is in the experimenting. Get a notebook and start taking notes of each step in your aging/flavoring. Keep track of everything so when you come across that special something you've made you will be able to make it again and again. As for the vanilla, go small amounts and let ...

8 years? Oh my...I just tried a sip from some extras that I chilled and wow! I will be honest no way this will make 6 months let alone 8 years. The Missus is also saying thanks for sharing as she loves it.

Wow this one takes off like a rocket...waited a half hour after adding yeast before air lock and blam...what a mess. Next time I will follow instructions and wait an hour. lol
