I used to run persimmon brandy every couple years or so. Those were just wild fruit trees growing in the mountains. Biggest thing I remember about is you dont use them until they hit the ground, then you had to gather them quick. Persimmon in the tree was too sour and would damn near give you lock ...

I have made persimmon wine & brandy. Time is its best friend with both drinks. Fermentation was slow and messy (over 100 pounds). Wasnt able to get a SG reading since the fruit is so stringy. Most of the barrel would not clear enough to be wine & had an odd taste to it. That is what I cooke...

I know the fruit well, they are usually very sweet and soft when ripe. I have not distilled persimmons (except some with apples) but I think they have a good yield in alcohol, but the flavor I think is very light. i agree they have very light flavour. So, If some one can tell me which way to distil...

What variety of persimmon? I like fuyu persimmons for eating but the other kind would probably work better for distilling as it is sweeter and soft. Its called as sweet persimmon here. Oh bro it seems expensive for a new distiller. As of now i am not sure enough that i can make good quality spirit to fill the new barrel. I think its batter to start with cheap one. in future if i go further surly contact you back..

Ravi, I got a rough price to ship you a barrel and it would cost $70aud with a 10lt barrel costing $230 I would expect it to cost $300 for the barrel. That's $262907 KRW. Only 4 to 5 liters of low wines from a 21 liter wash? You’re either leaving some of the goodness in the boiler, or dumping it down the drain. I would expect to collect at least 6 to 7 liters of low wines from 21 liters of wash, ie - roughly 1/3 of the wash...that is if you run deep enough into the ...

You could use all of your low wines and add wash to bring the boiler charge up to the desired level. I have about 21 liter wash.
