I run the same sizes, and usually have a 20-30 gallon ferment at 8% ABV on grain. I pump the liquid into the boiler and aim for around 10-12 gallons. If shy (because of the grain bed in the fermenter) I'll top with water. I'll fill the thump half full of grain slop. Ive always had at least 5 gallon...
