Re: Butter Rum

Diacetyl is highly toxic so the butter flavorings i would believe to have other components to achieve the flavors.

Re: Bochet mead

Crappy that you can only use that one now if you're a paying customer. Cheap but I think they've done folks wrong by making them join mead made right to use the calc.

Slowed way down

I've been around now for a couple years and went completely ape shit with making likker and man is it a blast. I've come to realize after slowing down last year because of work and the newest little one that I needed to slow down on my production of alki. I have now a few recipes I follow to the tee...

Re: A stab at metheglin

Don't forget acid addition, I've found that it can round out a sharp edge rather nicely. Time can be a friend too, rack, keep headspace down to a minimum and let it do what it do. Also...You can add some of you're domino's or cubes you've used in a bourbon or the like and it will add tannins and som...

Re: A stab at metheglin

Shoot man, sorry it didn't work out as planned, bummer!

BUT... don't toss it yet, rack it off the lees and don't let it have too much headspace.

Store away for a while then check it.

Butch, bring a bottle of Jim Beam to the gathering as it is "distilled spirits" and say that's what you thought they were talking about and look at their faces. lol

Be careful my friend because you never know who's driving the bus about to run you down.

Re: Bochet mead

No I dont n use DAP, only fermaid O. Not all the time do I do a starter but for some reason on this one I did, you don't need one if you rehydrate properly and have a strong pitch rate. say for instance if I have only one pack of yeast and I'm doing a 5 gal batch, I'll rehydrate with goferm and add ...

Re: Bochet mead

This one turned out Fantastic after aging in the bourbon barrel for a while, the honey notes pop out and it's delicious to say the least. I did take one gallon and add some boysenberry and blueberry and it's hasn't cleared yet and I may have to dose it with pectic enzyme to help with the haze but it...

Re: A stab at metheglin

I've been doing that as well  I rack 2 sometimes 3 times before aging, the one big thing I've ran into is having enough mead to keep head space down to a minimum. So when I'm short I'll just boil some water and put marbles in there to sanitize and fill up the jug till I'm within a 1/2"...

Re: A stab at metheglin

It certainly helps the ferment along by releasing the c02 which is toxic to yeast, also if you decide to add nutrients if you don't degas it will foam like a mad dog. I've had a 5 gal batch overflow a 7.5 gallon bucket. What temp and yeast are you using? I tend to stick to the lower end of the yeast...

Re: Prickly pear

That's definitely a possibility, I've not heard of anyone doing it but maybe it's the next big thing  I still have the juice and I'm using 3 lbs of the mesquite honey for a traditional to get familiar with its flavor. The honey itself has a little spice and a flavor I couldn't explain other...

Re: A stab at metheglin

I've done two so far, one with the spices up front and for the most part all the aromas were blown off in primary. The second one after I racked into secondary I added the spices and man does a little go a long way. I've found that starting in a 2 gallon bucket you can make slightly more so when you...
