I'm using a plain pot still, and in the past I've done several stripping runs, then put the low wines back in the still for a spirit run. Low wines average about 135 proof, and spirit runs finalize at about 160.
In reading several threads, I've come across a few of you that are diluting the low wines down to about 80 proof with water, then doing the spirit run.
Is there an advantage to this? What kind of proof can I expect if I do my spirit run this way?
