in the spirit of theory "utopias"

jim koch of sam adams brewing has developed utopias a beer of 27% abv. my best information says they use champange yeast. the question is at this abv. under distillation what ratio might you expect of methanol acetone esters, etc. from what i see here 12% abv is the top end of quality for mash/wash, is a 27% beer to far outside the realm to consider? cob
