Strawberry melomel

Well it's strawberry season at the local u pick it farm. I picked up a flat for the gf and figured I would try my hand at some hooch with some of them. Recipe is as follows.

2.5 lbs strawberry blended to liquid with green removed.
44 ounces honey
Water to 1 gallon
1 tsp DAP yeast nutrient
1 package ec1118
Pitched yeast at 72°f
64°f in building
Figure it'll take a while to fully ferment. Starting gravity was 26 brix or 15% potential abv. Here is what it looked like after pitching yeast. Can't wait to sample some when it's done.

7AM this morning, it looks like it's working. Took another SG reading. 24 brix 1.1011 SG according to an online calculator.
I'm gonna invest in stocks and bonds. Lace stockings and "un"Bonded Whiskey.

Sounds great! Don't forget to keep us posted. How long will you age this after fermentation is done?
But what the heck do I know.....I am still learning.

Looks yummy. That's a high SG. You must want something strong. I may try this, but will cut the honey to an SG of 1.08

I do want a potent drink. I wouldn't cut the honey if I were you, you could stop it early and just have it sweet if you like. I figure with the cooler fermentation it will not produce any off flavors. Should be ready to drink soon after secondary fermentarion.

Iv done something almost exactly the same in the past. I carbonated it in champagne bottles and it was one of the best brewing decisions I ever made :lol:
