for a 6.5 gallon wash. My question; is a sour mash really necessary? Since this is my first batch I wont have any backset, but will have for future batches. If sour mash is necessary for overall character of the finished product could I add lactic acid to my secondary? (Since that is what is produced during a sour mash).
