I've got the same problem, brother. I bought 350#, and it's going slowly.

Of my barrels, my favorite is the bourbon, but I only made one, and it's almost gone. But I can't really get started on more until I get that goddamned panela fermented, distilled, and barreled. :)

Just proofed my last double run to 60%, will leave on chips for 3-4 weeks more then barrel age it. Pictured below is 2 ball jars, the tall one that I just topped off to my last run is a 4 gallon jar the smaller one that has not been on oak chips as long is a 2 gallon jar so when I do my final proofing for bottling I believe I should have just over 6 gallons of rum at 40%. Good news is I still have 50# of panela but need to take a break from making rum and move on to some rye.

Just sold off the last of my panela. Life had different plans for me and not going to use it all I end of this year so passed along to another local enthusiast. Still have over 12 gallons of low wines to run back through though

I've had a science experiment running in the fermenter for a few months.
After I finished my last batch of Panela rum I left the last bit in the bottom of the vessel - probably 5 or 6 gallons.
To this I added live yogurt culture and a bit of sourdough.
I also got some Japanese probiotics from Badmotivator so I dissolved that and have had them in a cup and fed them a little sugar once in a while.
So today I wanted to get back into it and get some more rum wash in the fermenter.
Well I did some cleaning, then some chores, then put 100# Panela in a 25 gallon pot of hot water and dissolved it all. That's about 12 gallons water and 2 bags Panela for anyone wondering.
The fermenter smelled nice and fruity just like I hoped, it's had dunder and live yogurt culture and sourdough in there for a few months and nothing bad happened.
I put the dissolved Panela in and added water to bring the whole thing up to about 55 gallons and added my probiotics.
The whole thing is still a little on the cool side, only 72F so I've got the aquarium heater going and once it reaches about 85F I'll pitch my yeast.
Should be an interesting batch!

Pitched yeast as expected a couple hours later and then checked it in the morning (Sunday).
Fizzing away and the aquarium heater & controller working properly.
I could tell right away when I entered the shed that it was working, the right smells were present.
Checked again Sunday night, and Monday.
Left it be yesterday, my oldest daughter had her first child so I was preoccupied and didn't check on my ferment.
It smells great and is working so hopes are that I'll run it this (or next) weekend.

Isoamyl Acetate - sweet banana, fruity,with a ripe estery.
Ethyl Octanoate- waxy sweet, pineapple, fruity,with creamy dairy.
Ethyl Butyrate- fruity, Juicy Fruit, pineapple, cognac.
Isovaleraldehyde- chocolate, peach,fatty.
Ethyl propanoate- sweet fruity rum, Juicy Fruit, pineapple.
Ethyl Hexanoate- sweet fruity pineapple, waxy green banana.

Well this is certainly a different animal out in the fermenter.
100# Panela in a 50 - 55 gallon batch.
There's clumps of fatty stuff floating on the top and I get small chunks of it when I steal some for the hydrometer.
Haven't been brave enough to taste it.
Smells really good though!

I've seen some of that fatty stuff on the top of my ferments too. Just a thin film of it, sometimes with bubbles trapped in it. It's hard to know what it might be. Just stuff that came along in the cane juice, I suppose.

I never get chunks though, except "pellicle" from the muck.

I added about 8 ounces of live culture full fat yogurt to the left over wash from last time.
Along with some sourdough starter and the probiotics.
It makes everything that touches the wash feel fatty.
No worries of a puke this way! I filled the boiler to near the top and am about done with the first strip run.
It's good rum, I'm putting at least a gallon of hearts away white so I can see what it's like after it matures a bit.

So I'll get through my 3 stripping runs today (working on #3 now) and refill the fermenter.
Plus I replaced the exhaust on my car and did a few other things.
So far it's been a good weekend!

A substantial amount of this is going to be put away white, for sure!

Well I got it all done, and the next ferment started.
I like this one so I saved about 4 gallons of fresh wash with all the goodies and yeast in it and then once the wash was at 90F I poured that in.
Hopefully I'll get another batch like this last one.
Sipping a glass of fresh rum cooking up a couple burgers and getting ready for a few hours of relaxation.
I deserve it.

I worried a little today about not pitching new yeast but I knew that 4 gallons of wash had billions of live yeasties in it.
No need to worry, this one is going even better than the last!!
Guess I'll just do it again once I get this batch stripped out!
Oh no, then I'll be out of Panela!
But I do have hundreds of pounds of grains sitting here, so I guess I won't get bored. :D

I visited my fermenter today and found...
Exothermic reaction?
My heater was set at 80F but the temperature sensor reads 86F.
The smells out there are good so I'm not really worried except that this is like day 9 of a 50 gallon ferment with 100# panela.

Doing the spirit run today.
Added about 6 quarts wash from the next ferment.
God this stuff is good.
Also 3 gallons in and still above 80% wow!
Diluted a little hearts with pure water and OMG this is good stuff!

Well that's the best rum I've run so far.
Poured it into a small glass, added about as much water, mmm smooth and tasty!
The run stayed above 80% until the last gallon, when it steadily dropped down to 40% when I cut it off.
It will be interesting to see how this one turns out with a little age on it.

Simple column with a liebig on top of a keg.
Doesn't get much more basic, but works extremely well.
No longer running with any packing, not looking for any kind of reflux with my potstill just want good flavor.

I am not out of barrel space, but I want to put Bourbon in my remaining barrels.
What could be better than two 15 gallon barrels full of Bourbon?
(ok, more than two yes but...)

So I'm going to try keeping a bunch white in 6.5 gallon carboys.
I figure it's this good right off the still, how will it be in 6 months?
A year?

Besides I already have a bunch of great oak aged rum!
