Acquired my second batch of 45 lb of honey. Last time I added 10 lb black strap molasses with 45lb honey, then filled a 5gal wood barrel with it a 130p. Setting now for 2 months, letting it go at least 6 months, outside barn climate aging.
I already have a 5gal wood keg with a 10lb rye, 40lb black strap settling down at 130p. Bee confined for 2 months so far. Spicey tail.
So question is, any idea of what else to use this batch of 45lb of honey for? Was thinking of 20 lb malted rye, maybe 10lb cracked corn. Not looking for anything fruity, just a good light grain build.

That's a LOT of honey. I would almost put away the still for that one and just ferment it to make a whole lot of nice mead with it.
I think you're on the right track going with a heavy rye grain bill though if you're going to make a whiskey with it, although maybe 20lbs or so of honey for that grain bill would be a more balanced proportion in my opinion.

I would definitely make at least a gallon or two of razzberry mead though. I cant remember if I got the mead recipe from jumbo or much but it is a keeper too

I to wound up with a bunch of honey and currently have it fermenting with cherry jam that I found it a closeout store 20 pounds of honey and 7 1/2 poundsof the jam it's been bubbling away nicely for two days now. It's in a 15 gallon fermenter

Agreed that honey spirit is disappointing; crush some peaches, get a few oak barrels, make a fruit mead.
The still is not a liar. Mash and ferment quality is 99.9% of your performance.
