pineapple recipe ??

recently had a few people asking me about pineapple moonshine, looking for a recipe made with juice and perhaps canned pineapples,sugar and a neutral to pour over crushed ice, or a recipe similar, (not sure if this post is in correct location)

Make a neutral and macerate the pineapple for the biggest flavor in the spirit. Also, have a look to the thread on making Geist. Lots of ideas there.

If you actually want to ferment and distill pineapple, I recommend blending in a bit of sugar syrup - something I almost never recommend - and then diluting the alcohol potential to about 7% with filtered, chlorine-free water. Pineapple is one of these fruits that's almost too acidic to easily ferment, which makes any mash made from it susceptible to infection by microbes which can tolerate such a low pH. Diluting the juice will also dilute the acidity. Good luck.
The still is not a liar. Mash and ferment quality is 99.9% of your performance.
