Well I stand corrected, my son and I just cracked a bottle of our plum brandy (clear) and thought the squatters out back had watered down the likker. Grabbed a hydrometer and checked and it was 95 proof. Holy moly that was some smooth sweet stuff.
On the rum part, I'll agree with googe! At 130 proof is smooth and sweet and.... damn I need to make some rum :D

I just did today, well you know how that goes...
I made the rum wash with 100# Panela and had about 55 Gallons wash.
Ran it through and had about 10 gallons low wines.
Ran it through again today with some newly fermented wash and got about 6.5 gallons at 70% ABV.
Thing is, I poured off a pint from the middle and poured about 2/3 into a shot glass and added water and WOW that is so very flavorful and smooth!
Can't wait to see how this ages out.

I'm jealous, I've not yet had panela. I want to soo bad but can't find anyone to throw down ( yet)

I do love the rum I made with the dark brown sugar and feed moll. I have enough to make 30 or so gallons. It's soo smooth I just can't get enough. Lol

I brought some of last year's peach brandy out of town for work and sipping some right now. Pretty smooth tooo!

Just an update on my question. After trying several, I have to vote for UR Rice recipe. By far the best to me.

i did 70 pct corn 16 wheat and 14 barley
coming out the still smooth as silk
its better to think like a fool but keep your mouth shut,then to open ur mouth and have it confirmed

yeah i know
and its really worth the effort
im doing a spirit run now on a 30 gallon 80 lbs all grain
the malts are my own doin
got a nice sweetness out of the still and smooth as a babys bottom
is there any commercial distillerys using corn-wheat-oats in the bourbon market
i have never tried oats but by the sounds of it im about to :thumbup:
