My whitedog chase

Experimenting really, just looking for a better white dog.Just posting this to keep track. Expect something new monthly untill i find what im hunting.

This month im doing corn and rice.

Recipe:
30# corn meal
20# coarse ground white rice.(4-6 pcs per grain)
25 gallons water
Bakers yeast
Oyster shell

Protocol:
Heat 10 gallons water to 212ºf and add to fermenter with 20# rice and mix with drill. Cover. Heat 15 gallons water to 212ºf and add to same fermenter along with the 30# cornmeal and mix more.Wrap fermenter. Check temp. At 180 add sebstar and mix. Monitor temp mixing occasionally untill 148ºf. Check and ajust ph to 5.0 then add sebamyl. Mix(again). Allow temps to drop to 90ºf and pitch yeast. Ferment on grain at 83-85ºf.
Mashing in now, updates to follow.

The center hearts on a 60-15-25 COB is nice white. Soft and sweet with a fantastic barley flavor.....just a suggestion for the future.

Question jb: what are you looking for in your white dog? With 60% corn and 40% rice, the corn character will be buffered by the rice, less sweet with less corn aroma. But maybe that's your target.

Something with enough corn taste and sweetness to be able to use in a whiskey based cocktail or even age but still light enough to flavor and sweetness wise to use in a vodka based coctail. Lighter grain characteristics than most irish wiskeys but more than titos or dripping springs vodkas. Tall order huh?

Could always run a more neutral profile, like an all rice enzyme mash, and a corn/grain bill separately. Then you can add the neutral to the corn based at the proportion you are looking for. Your best Irish whiskey, with a neutral cutter, for example.

50/50 malted/ unmalted wheat is nice and light.
obviously not corn flavored but fits the sipping bill and mixing bill, early days for me to say how it's aging up

Both great ideas. Ill definately try both at some point. This all started due to my wife commenting that i dont comprimise enough so im trying to find a good point between booners ran with a thumper(me)and what i call booners vodka,stripped then distilled 4 times with thumper and only water in the thumper(her). Im hoping by using the rice that the taste will be light enough for her but still corny enough for me and only have to do a stripping run then a second run with the thumper hooked up and just water in the thumper. It would sure save me time running the still.

Try blending two different cuts out of the one run. His, wide cut, Hers, narrow cut. E.g., line up the keeper jars and draw an arc through them with a felt tip pen, then make up the two different blends.

I've never thought of that. Might work because sometime she'll drink the very center pint and the one before also.

Jb, how has this turned out for ya? Last updated on the 10th and now it's a week later, just wanted to see if you've ran this and what your findings are.

The wheat was just harvested in my area and like der wo''s idea of the 50/50.

What about an all rice/enzymes mash? Could be good I suppose if you can strain the gloopy mess. Or steam or thumper or... I'll shut up now :crazy:

Stripped the first ten gallons day before yesterday and got to paint strain the rest today. All rice is next on the list but not too sure it'll hold it's own in a cocktail designed for whiskey though. If it's too gloopy I'll just run it in the thumper with water in the boiler to strip it.

60/40 rice and wheat?

Shit man, once I'm done working out of town I'll have to start my own experiment with a few.

I'm about to stop and get a 50lb sack of local white wheat and depending on the price red as well.

Sounds to me like you're gonna have a lot of spirits to make a rightful decision, try to stay sober long enough to make it lol

The final tally on this one(for me)...
60% ground white rice,30% white millet 10% oats. Ec1118,seb enzymes.
Stripped then ran through the pot&thump 2 additional times. The wife likes it white and i like it oak aged. White itll mix into anything and aged its a fine,mild whiskey.

Sounds like a winner! if I ever stop with rum and HBB I'll have a go with this, seems like it would be a nice drink :thumbup:
