a new gin recipe - rosemary & ginger gin

I'm looking to change up the flavors I normally work with by using fresh ginger and rosemary in a macerated / vapor infusion. So I need to figure out the rest of the recipe; juniper obviously being number one. I like to keep my botanicals list around or under six ingredients.

The list being at three, What are some good suggestions that would tie these three flavors together? And what are some suggested amounts for the ginger and rosemary, as these are some strong flavors I imagine it won't take much of either one.

By the way, not sure about the ginger but I like the idea of the rosemary.

rough draft of recipe:

6L vodka @ 40%
juniper 70g
coriander 20g
ginger 15g
rosemary 7g
grains of paradise 5g
orris root 5g
cassia cinnamon 3g
total of 130g botanicals (22g per liter)

Diced ginger, rosemary leaves (woody stems removed), and cassia will be placed in vapor path. Other ingredients placed in the boiler, probably for a 12 hour soak. I'm looking for any yay's, nay's, objections or suggestions.

Agree with NZChris add some orange or lemon peel - no pith though

citrus does sound like a good idea! I'm also wondering if the ginger will carry over as a nice essence, overpowering, or just complete shit... :eh:
Maybe I should change this to a Lemon & Rosemary Gin? Or lime... if only could find the right lime

I’ve just made gin with the usual ingredients and added two 6” stalks of rosemary and two fresh bay leaves included in the boiler. TLoML says it’s not her favourite and she says we need to eat roast lamb and drink this gin..Even without lamb, I need to make more ‘cause it’s almost gone in less than a week. I’m interested in adding cilantro for a reallly punchy herby flavour for the next one.

So what was the final botanical bill you ran? Did you end up including the citrus?

My basic recipe is

14g juniper
14g coriander
2g pepper corns
3 pods of cardamom
Roughly ground

3” strip of lemon peel
3” strip of mandarin peel

Into the pot of 2 litres of 50% watered down with another couple of litres of water

I havn't gotten around to running the above recipe/idea. I need someone to run a test batch of some sort with the ginger to see how it comes over in the distillate. That or maybe I could dig out and piece together my old stove top setup..

Do you think you used too much rosemary? It sounds like it came over strong.

Not really, to me it’s a hint, rather than overpowering. I’d like to double it to make it stronger - that may be too much.
I thought of adding thyme or fresh basil as well.
With a slightly modified version of odin’s easy gin, I’m able to add botanicals mid way through a run.... turn the gas fire, let it cool below 50C/120f, lift the column off the boiler and add in a little more botanical, then fire it up again. Typically I start with basic gin and add flavours from weak to strong if more than one addition. I’d add thyme in first then go with rosemary.

I’ll keep you posted....
