Tamarillo's and mandarins

Post by erbachem »

Has anyone done any maceration experiments with tamarillo's in the past? What was the outcome? Any favourite recipe's out there?

I was looking for something different to try recently and decided to see what effect macerating mandarin skins would have. Turned out much better than I expected. The result had an unmistakable mandarin taste and smell to it. In the end I topped the vodka up with sugar, cream and sweetened condensed milk to make a mandarin creme liqueur which was very well received. So much so that I am macerating another lot of mandarin skins now. Rough recipe as follows.

Mandarin vodka

0.5 Litre 40abv vodka
Skins from 6-8 mandarins.

Use a sharp knife to scrap as much of the pith (white bits) off of the mandarin skins. Add to the vodka and allow to macerate for at least one month. Strain into another bottle once maceration is complete.

Mandarin creme liqueur

0.5L mandarin vodka
0.5 - 1 cup sugar to taste
1 can sweetened condensed milk
1 cup cream

Mix all ingredients together thoroughly and chill. shake occasionally.
