Kentucky shinner wrote:I have been doing 30 gallon ferments with this recipe with great success.

15 pounds of all grain sweet feed
10 Gallon hot water 150F +
let that set for about 90 minutes
add water up to fill up to 25 gallon mark
then add 50 pounds of sugar while stirring the hell out of it. that will bring you up to 30 gallons.
starting sg of 1.06
add 1 packet of prestige WD with ag yeast
(you could also use bakers yeast I just prefer the Prestige WD with AG)
place a towel over the barrel to keep bugs out

the next day it sounds like bacon frying in the pan and smells great.
this ferments out in about 8-10 days depending on the temp. My garage has been staying about 90f lately.

Can i use this 30 gallon recipe in a 55 gallon drum with a sealed lid and a bubbler? where can I buy this yeast and how much is in one packet? Can this be fermented in my basement? Temps at 68 degrees in basement. Or does it need to be warmer? If so, how do I get it warmer? Thanks!

you can do it in a 55 gallon drum with an airlock. I am afraid 68 will be too cool. It will work but it may take a pretty long time. 75 would be better. As far as the yeast I have started using Fleischman or red star and they work great. put enough in to totally cover the top of your wash. It should take off in about 4 hours.
The sweet feed has plenty of nutrients for the yeast.
Hope this helps.

you can let it sit yes. I have city water and mine does not have enough chlorine to make any difference. Mine will ferment out just fine. You could boil the water also.

I just bought sweet feed from the feed store and Ive never used it.. I see pellets in there. Am I supposed to seperated them. should I post a pic I dont know. I dont want to waste a batch just for this. I followed the original 4 inches of feed, 5 pounds sugar, 1 packet yeast and water.. I just started it today. I read this post and still did not come come to a conclusion if the pellets are good.

Distilled water and boiled water will lack oxygen which is essential for the early development of the yeast; so you will have to aerate it.

Hey KS -- In one of your videos you said you tried cooking your grains using this recipe. Any big difference in flavor between the no-cook and cooked version of this recipe?

My second generation pre-distilled tastes much more sour than the first generation. I can't wait to run it through and do a sampling of both generations. Maybe I'll pick up on something but I will say that it wasn't sour in a bad way.

Hey KS, I feel like you were about to review your liquor from those stripping runs you did way back before questions were focused on sweetfeed and pellets. My understanding is a stripping run will save time, make cuts easier and retain flavour for a good liquor. Would you agree? Also, I can't see adding sodium carbonate to low wines unless your after a neutral. I would assume though that I need to dillute the low wines to an ABV of 50% or so. Any advice is greatly appreciated because I hate learning from my mistakes time and time again, but then again, I wouldn't know much if not for that.

We do not get sweet feed here, when I asked the guy in the grain store and described it to him, he said have a look at this, we call it meusli, which was a mixture of grains etc with a binder of mollases. It might be the same stuff and the call it by a different name. Anyway I put down a 30lt wash with this stuff using 2.5kg of meusli, 6kg of sugar 30 litres of water and 3 tablespoons of bakers yeast. It took off like a train, it was the most vigorous ferment I have seen, and finished completely in 5 days, I left it for a couple of days to clear, and I have just run it through the Magic Flute. It aint no whisky, with the mollasses content, it makes a very nice rum, better than any rum I have made before, this was only tasting the whitedog on a spoonfull of water, but I think with oaking and a bit of age, this is going to be a nice drink. Or I could just dilute it to 40ABV for a white rum, I will let it air for a couple of days and then decide.

I started a 6 gal. batch of sweetfeed it was working very well but on day 6 it has a cap on it that looks like mold. It is real fine and white. Has anyone had this? Is it still useable or should I dump it? This is my first batch and not sure.
