Now I've made a second batch multiplying your recipe by 4, and the hydrometer is reading 1.56 which converts, according to the hydrometer, to about 7% alcohol potential. Am I missing something?

Yes, perhaps a brain cell or two. Or perhaps I'm such a rookie and so eager that I just jumped the gun, not knowing any better. I think what I did was distill my concoction before it was fully fermented. The second batch I make in exactly the same manner, with the exception of using 4 packets of Lalvin 1118, and it's still working after almost 4 full days. I harvested the other batch after about two.

AND, actually the hydrometer reading would have been 1.056, not 1.56. Still that does give me an oddly low potential alcohol.

Reminder to self: do what you've been advised and spit out the testers.

My two 5 gallon batches (used the formula on page 5 and scaled it up) are still going after 5 days and as of today, they both have a SG of 1.040 (they both started at 1.085) Think I may need to invest in an aquarium heater (or two) if I was going to use this recipe again. Not that the recipe is bad, but I'm no where near the 72 hours that other folks have had.

All Bran is awesome!! i only ran it once, and when i did my cuts & blending i added a bit too much tails. over a month later i still have a pint left and the flavor is great. You can really taste the cereal. this stuff would be great for breakfast  Think i need to make another batch to take camping this summer.

Started a new batch of All Bran tonight.

11 gallon total wash.

20 lbs sugar
2 boxes generic bran cereal
1/4 cup DAP
2 jars fleischmann's active dry yeast

placed the crushed bran & sugar into my fermenter. added 5 gallons boiling water, and mixed real good for about 5 mins. added cold water up to the 11 gallon mark, mixed in the DAP., gave it a good stir. Pitched the yeast

The airlock started going crazy within 10 mins and has been going strong

I have done this recipe 1 other time, and really liked the wheat taste in a single run off a pot still :D

1/4 cup of DAP? Please tell me tats a typo? That's way to much for a 11 gal ferment. And you really shouldn't need it with this recipe anyway. The cereal provides the nutrients. The only thing you mite add is Epson salts. And just a pinch of it.

+1

And it also sounds like a healthy dose of yeast unless those were very small jars...

If he is using the 4 oz jars of yeast like I was? I figured it up when I started my 12 gallon batches. And by your original per gallon recipe that's about right. If you upscale. Boiling half a jar and pitching the rest. But I dropped it down to one jar. Boiling 1/4 of the jar and pitching 3/4 of it.

So I would say if your going by the recipe its pretty close. But real world for the bigger batches. It's overkill.

didn't measure the dap. just poured some in from a 1 lb bag and a clump fell in. will this mess it up?

yeast was 2 4oz jars. the only other time i tried this recipe it never finished dry, and i was told i under pitched the yeast.

man this thing is frying like crazy. way harder then any other ferment i have done.

But this recipe doesn't call for DAP. Nor does it need it. The all bran is the nutrients. A small not of Epson salt really is all that is needed other then the cereal.
