I like bakers yeast fermented at 83-85°f

Interesting going back and reading from the beginning. I like Crows comments and agree totally. It's been a few years since I have fermented in the downstairs basement bath as I have now built an insulated fermenting cart on rollers. Also with the smaller space I have switched from a heater to a lightbulb for my heat source.

Slower the better IMO

This time of year, when temperatures are low, there's a choice I have to make as to whether to warm the ferment, or use a different yeast. Bakers is great in the summer, but doesn't care for 60F much. Nottingham works great down into the 50's, but throws flavors I don't like in the summer. I'll add some heat to some ferments in the cooler seasons, but mostly I adjust the yeast I'm using.

US-05 will go to 59, very clean. Won't get hardly any influence from the yeast :thumbup:
