Question on nuke aging

Post by 850stealth »

I've read the whole thread on nuke aging and I have a question on something I didn't see in there. I have some 3 gallons or so of rum I made at 62% now on toasted american white oak and 2 gallons of a blend of cornflakes/rye bread whiskey at 65% on toasted and then charred oak sticks. Color of the whiskey is great. Rum seems a little slow to color and the taste is needing time. So my question is will the spirit benefit from getting nuked a couple cycles or will it over oak it?? It has been sitting for about 2 maybe 3 months. Or should I just try the nuking without the wood in it. Dont want to ruin it but speeding it up a bit I wouldn't mind. The rum seems to be lagging in taste and color compared to the whiskey. Does the nuking only work with new spirit or can some that has already started aging be cycled a couple times?? Any experience with this??

I've not tried at the 2-3 month mark. That seems to be when aging whisky goes through a rough patch, and needs time to be given more time, even if it was nice around one month. I'd say give it a go, and report back.

In my humble opinion I think it is best as a kick starter, once it's been in the barrels I would personally leave it. But again I have never tried it as an end step and until someone does I guess it is only a guess.

Why not try it with a quart or so.
