Corn Meal Mash without Enzymes?

So i made my first corn meal mash, and now i have no enzymes. Just sitting there cooling.

Will the starch eventually break down do sugar?

Any help?

Not before something other than yeast makes a home in it. Need more details though. What was your actual procedure and measurements?

Might be able to add sugar for something for the yest to eat, and leave the corn mean there for nutrients.

Yeah, without malted grains or liquid enzymes you're not going to get any conversion. Gonna have to add sugar. The corn meal will still convey flavor though.
No, officer, I wasn't distilling alcohol! It was probably that guy!

Without enzymes there is no mash.

Without some sort of enzyme provided by either malts or liquid enzyme addition, what you have is polenta.

Their is a third source of enzymes. Google chicha.

Beano is an enzyme, but it breaks complex sugars to simple sugars to be consumed by the yeast.
Without the amylase enzymes, there are no sugars yet.
