I used a mortar mixer and it worked well, I removed as many stones as I could get out which was the most. the rest was fermented and distilled, skins, pulp etc. etc.

Thanks NZChris and ShineOn.. I'm going to look into the mortar mixer. That seems like a lot cheeper and faster rout than a fruit press.

There's nothing hi-tech needed. I just jumped into the fermenter and trod them like grapes.

Ok my yeast should be in on Saturday so I'm about ready to get started. I'm not quite sure about taking an accurate OG reading with the equipment I have tho? I just have a regular glass hydrometer and a graduate cylinder to take my readings in. Can I actually get an accurate reading with this setup? I'm sure all the solids in the peach mash is going to throw things off a bit. Should in invest in something different or just not worry about my OG reading so much?

if you let some settle you can get sample, just mix/mash them up take a sample and put in the fridge and pitch your yeast in the fermenter.
Once the sample clears enough... test it!
Then make a peach smoothie with your sample

If you tread them rather than pureeing, you should be able to push a sieve in and bail a sample out of the sieve.

I got two pints out of the peaches I had flavoring in my neutrals and sugared the peaches down after soaking for a week. It came out pretty damn good. I may have went a little heave on the sugar but my wife actually really likes it. She has been my worst critic so far.. I can't wait to try the actual peach ferment. I got my yeast in today but it will probably be next weekend before I can get started.

Mine never even looked like that, but it's worth another try.

I sugared the peaches down after sitting for a week in the neutrals but I also had a separate jar full of just peaches and sugar. I was making peach syrup without alcohol that I added later, that's what gave it the nice color. You can really taste the peach flavor too.

If you squeezin or not put them in a sack an pry em to the botton of the barrel an float em every couple days an pry em back down. After it finished squeeze the plumins an then hang the sack over barrel to drain.
Peachs mostly float so if you putin em in kettle keep it stired til it ready to cap.
If you pull the cork an aint got no peach scent you doin somethin wrong

Hi guys Saturday will be the start of my firs brandy adventure. Still haven't decided if I'm going to use any sugar or not but if I do I can't really call it brandy. Whatever it may be I hope it turns out well. If it don't I'm going to drink it anyhow!! I want to thank all you guys for you're comments and advice so far and hopefully more to come. May the shine gods be with me!!

I did mine that way because I planned to strain but decided to ferment all but the stones, I did take a 5 gal bucket of skins and ferment it separately and add to the thumper on the final run.
Ferment the lot and leave plenty of head space, man will that shit grow on ya quick.

Tater I got a 30 gallon fermenter not quite sure how many lb it will take to fill it. And no I'm not going to fill it to the top gotta save some head space. I got plenty of peaches tho, I got a hole chest deep freezer full. I bet I got 300 pounds of peaches or more.

300 lbs should be in neighbor hood of 6 bushel = a 50 gallon wash = around 3 gallons pure brandy if ran right and peaches got fair sugar content in them .And yes adding fresh peach in thumper will help hold the taste

That's what I got to the nunber, 3 gal off 300 lbs give or take 10+-
The taste is most impressive to say the least. Tater I didn't strain in the fancy fabric you used but I got some very tasty tasty white brandy because of you!
Old Town, your time is coming bubba! You're the one who has to make the decision and I've given you what I did and now you have the man Tater chimed in sooo... quantity or quality!
I had the luxury of a ton of peaches and though I didn't document all of what I did, I know the results! I'd gladly meet up with you this weekend so you'd know exactly how pure peach brandy tastes. DELICIOUS Is what it is and keeps getting better each day.
The choice is yours and if you have enough and can get more do both but do more pure than sugar.

I'm going to go with the all peaches no sugar. If I'm going to do it,I may as well do it right the first time. At least try to do it right the first time.
