Ok so I'm looking into a pineapple run. Anyone else had any luck or insite?

Thank you for the direction. I tried a previous pineapple mash but ended up making a great wine but not a wash. I will keep experimenting as long as I get cheap fruit..

I made some Pineapple rum, it turned out pretty good.
I added rum that I aged in oak for a good long while IIRC to a bunch of cut up pineapple in a big carboy and let it sit for 6 plus months.
Then I filtered out the fruit and bottled the rum as Christmas gifts.
No experience trying to actually ferment pineapple, it's pretty acidic.

Personally I would blend the fruit , check the ph (possible adjustment) and then ferment and distil. I don't know if you will have a lot of flavor transfer in the distillate, I have no experience with pineapple but with other fruit and in general it is very difficult to bring the taste of the fruit into the distillate.

A while ago I added some pineapple to a fermenting pannela wash for rum, went through two bags of oyster shells on that ferment. Acidic - yes, did it add wonderful flavors - no.

in my area pineapple beer is made quite often. like ginger beer. usually not at high strength BUT i had plenty that was high strength. but most ferments include some sugar.

I've fermented pineapples before, they have to be used sparingly, and the flavor didn't really present itself in the wine, so I don't think there would be much point in trying to distill pineapple wine, it seems like any good aromatics that were there got blown out the airlock,

Now an idea that sounds promising would be to blend up some pineapple and add it to some nuetral or low wines before the spirit run, see if you can infuse some pineapple aromatics into your likker gin-style
