It's rated at 55,000 BTU. I'm running it as low as possible. I thought running at low boiling temp was correct. At medium output the flames will fan out across the bottom and up the sides. Should I crank it up?

There is no low boil, there is just boil. No matter how you heat it the temperature of the vapor will be the same. You have to run a pot still by the output. So turn it up as much as you want (within reason.) You will not gain anything by going slow. You have to turn it up to go faster.

Stripping you can crank the heat up to increase the rate of boil to as much vapour pressure as the condenser can knock down. Spirit runs are where you might choose to use a gentler rate of boiling say until you are sure you are in hearts; at least that is how I run my pot still, YMMV
