Just wondering if i take the stainless scrubbers out of the column of my reflux still and run it fully open at the tap, will this operate as a pot still?

Just a simple column with a tee section/cup take off point and a condenser coil at the top...

LM yes. As you describe it.
VM yes if you remove the reflux condenser and cap it.
Cm yes, if you turn the reflux condenser off.

I also see no need to remove the packing. It's just extra work for little to no benefit.

Agree with bearriver...remove the reflux coil, cap the top,...potstill! No benefit to removing the packing. Maybe some benefit to leaving it in!

careful if you have a valve on your takeoff, wouldn't want a pressure bomb
