Temperature drop during a run

I know I'm asking a ton of questions and I try to search them before hand but try to search Teamperature drop.... :) This is going to be convaluted but bear with me please.

The problem - The head temp drops from 78ish to between 60 and 70. Then I start turning the reflux water valve and increasing fire on propane tank...everything you are not supposed to do. Can the heat from a propane tank vary during a 4+ hour run? what causes the drop in the first place? should I just sit back and watch what happens, not mess with it?

Now, i don't really start turning everything, usually just drop the water flow. What is going on, what should I do and what do y'all do?

It's a psII on a keg using propane. I've asked about this in different posts, it's just different symptoms, overheating and puking, temp drops randomly. I just had a hard time yesterday and want to solve some porblems.
