I want to plumb my thermo probes from dual PID's, into the in/out stainless plumbing to two 1/2BBL kegs in a single tier brewery project. Drag is they are listed as "5mm." Measured crudely with tailors tape my wife has had since chilhood(she's Japanese so it's metric), and it LOOKS spot on 5mm. Dilemma is how to transition off of a "T" from 1/2" down to a metric 5mm machines threads? Thanks. And sorry if this embarrassingly simple and I'm just ignorant.

hmmmm...let's see...
You could solder up a "plug", i.e. multiple layers of copper sheet to form a plug for the end of the 1/2 copper Tee. Then, drill and tap it to 5mm (which is just a bit smaller than 1/4"). But, get you a metric tap set to do that with.
