I've Got Sugar Beets......Now What?

I made a distiller for distilling essential oils from plants, but that is not working as well as I'd like. I want to use this distiller (still) for something (since I put so much work into it). I decided to try my hand at alcohol....perfumer's alcohol which uses sugar beets (from what I heard). So I planted some sugar beets; they need to be dug up now but I still have no idea where to go from here.

Can anyone here help me or point me in the right direction?
