Greetings from Scotland

Hi - I've spent a good few hours reading the boards and thought it about time I introduced myself. I studied chemistry but ended up in the food industry here in Scotland. I'm a keen home-brewer, both beers and wines, and enjoy whisky and rum. Smoky Islay malts and Lambs Navy Rum being the current tipples. I'm interested in how the recipe, equipment and method govern the quality of the finished product. If I ever get beyond reading, it will be try and achieve a quality I can't buy. I love the look of shiny copper and some of the sculptural beauty of stills made by the likes of mash rookie leave me utterly speechless. Mine, should it ever happen, will be a very simple pot still. Thanks to all those who have put this remarkable site together. Slainte Mhath!
