HI, I live in the united states. Ive been distilling for about four years nnow. I just up graded to a ten gallon stainless steel pot still with a modern copper condenser and a coppper proofing parrot. All of my mash has been a sweet feed , sugar and bread yeast combination so far, typically resulting in a similar tasting product.
heres my question:
SO, ive been doing this for a couple of years and yall(yes im from texas)
have kept me from making some rooky mistakes. I appreciate this site and
finally had to join because something strange happened. this is my first
batch using air locks. I usually loosly seal a lid on my ferment container.
(dont ask what its made of, I understand its illegal to talk about plastics
even HDPE ) I start my brewing process and it taste and smells like green
apples, more accurately green apple jolly ranchers. I know that the brewing
process got too cold. Due to the air lock I didnt give it as much attention
as usual. I usually airate it daily through the fermentation process. only
because thats how I was taught and it worked. I came out with a MUCH higher
proof product. 140, usually 120ish? sh. BUT it taste like green apple jolly
ranchers. It taste good. really good, so good my wife even approves and she
dosent like my shine but shell drink jose silver lol. I really like it but
im leery to drink it because this is a tried and true recipe that kind of
has my signature on it. was it the air lock, the lack of stirring, the mash
getting too cold? if its safe id like to duplicate it. the run went great
and the product good and strong. . . . . im at a loss. I like it but its
not normal so im concerned.On a 10 gallon still with abouth 8 gallons of
mash I got 6 quarts of shine over 100 proof using a home made proofing
parrot which im questioning. 2 pints of shine tasting like green apple at
140 proof which it high for me. wow ive rambled far to long, do you know
what the deal is? Low ferment temp, higher and more alchocal yeild with
great but odd taste from trid and true recipe. the flavor kind of came back
to normalish after two pints(lacking my flavor) Im finishing another run from a wash made at the same time in the same way ind it also taste like green apples in the heads and early hearts and the mid and late hearts are relatively flavorless but kind of have the expected flavor just way toned down.

Off Flavour: Acetaldehyde

How to Identify: This one tastes and smells like green apples, rotten apples, emulsion paint or freshly cut pumpkin.

What it is: Acetaldehyde is a naturally occurring chemical produced by yeast during fermentation in all beers. It is usually converted into Ethanol alcohol, although where not enough yeast has been pitched or when dealing with higher alcohol beers, this process may take longer. It is a characteristic flavour of some beer styles (e.g. Bière de Garde) but is considered an off flavour at high concentrations in beer.

How it is caused: This off flavour is caused when the yeast does not have enough time to convert the Acetaldehyde into Ethanol due to either a lack of fermentation time, not enough yeast for the wort or low-quality yeast. It can also be as a result of packaging problems in bottles.

Letting the temperature rise at the end of fermentation and giving the yeast some time to "clean up" will reduce this type of off flavor. Once again, "Patience" is what I advise.
