Hi all,
A new one from the land of the trappists (Belgium). Sorry for my english which is a bit rusty.
Been busy distilling all kinds of liquor since almost 2 years now, learning things mostly by trial and error. The main reason I registered on this forum is because I want to share my own experiences and to hear about new stuff from you guys. I own a 10l alembic & my favorite drinks are anise-based (absinthe, pastis, raki, ouzo, ...).

Your English is fine and that's an interesting list of drinks.
Hopefully your absinthe procedure is something you can share in the proper thread.

Welcome, I am also interested in any successful recipes you have as I have now planted anise seed and grand wormwood in my garden. On a side not my wife and I have been to Belgium several times as her uncle was killed and is buried in Belgium during WWll.

Just brewed a trappist style triple. 20 gal of a Westmalle clone...

Hello Angoth , welcome . I live where raki and ouzo are the drinks of choice ....I think I must be an anisehead , because like you I love these drinks !, and the french pastis ,pernod,rickard.
I have a modest pot still and just getting my head around raki and its variants .Here they flavour it with honey , almond , bergamot and a tree sap from the island of Chios , called mastica , (from the terebinth tree ). Here growing wild you can find juniper ,artemesia , wild fennel , glycoriza ,( sweet anise).The rest of the herbs and spices are all available in the market here.I have just found a supply of caraway seeds from the UK , so for sure I will be following your recipes esxman (novice)
