Hello distillers and wannabees like me :)

After around 40 beer / cider/ mead brews it is time to step up and into to the world of distilling. Brewing beer has become somewhat ho-hum and the fruit brews have that frustrating yeast ABV ceiling when I'd really like to push them up into the schnapps area.

The current plan, vague as it is, is to work with the seasons to get whatever cheap fruit is available and experiment to get some good recipes going over the next 1-2 years. After that maybe try branching out into some whiskey. Given that plan I'm expecting to go for a copper alembic.

Particularly looking forward to being able to do comparison batches much easier than with beer etc, and to be able to recycle my mistakes rather than having to tip them onto the flowerbeds and veggie garden..

Welcome to the forum.

There's nothing wrong with a nice drop of fruit wine vinegar, just pretend it's deliberate.

Welcome mate , sound's like you have a plan . heap's of fruit over here in the wairarapa , I have about 6 plum trees, 1 peach and 1 Apple tree, get Masse's of fruit each year!. Good luck with your journey.
